Air Fryer Potato Veggie Pizza

There are two things that I’m in love with these days – yummy pizza and my handy air fryer!

Pizza is my go-to when I want a quick meal, while the air fryer is my time-saver and a healthier alternative when I want to fry something minus the oil (and the guilt).

So this week, I’ve decided to combine these two with this lip-smacking recipe using U.S. frozen potatoes. This is perfect, especially if you are on a gluten-free diet because the potato, unlike the usual pizza dough that is made from flour, is actually gluten-free.

Why frozen potatoes, you ask? Simple – it’s so easy to use. They come in many cuts, I can use them in a variety of meals, and I can store them for a long time in the freezer.

When the craving strikes, you can easily pop them in the air fryer and they’re done in minutes. Need extra flavor? Sprinkle a bit of flavored powder or top with cheese, sour cream, or barbecue sauce.

So simple, but so craveable! My kids love to snack on potato fries, which I love because it’s good for their health. The spud provides vitamin C, potassium, protein, dietary fiber, and more. It is also a complex carbohydrate, so it provides me and my family with energy to help complete our daily tasks.

For this recipe, I used U.S. frozen curly fries as the dough. It’s so good! The texture and the flavors work so well. You have to try it!

Ingredients:

  • 3 cups of frozen curly fries
  • 3 eggs, beaten
  • 2 tablespoons melted butter
  • 2 medium sized bell peppers, sliced (green and red)
  • 1 can of mushroom
  • grated cheddar cheese (or mozzarella if you want the extra pull)

Instructions:

  1. Roughly cut your curly potatoes into small pieces, set aside.
  2. If you have a pizza pan made for your air fryer, you can use it. But since I don’t have one, I used my springform pan.
  3. Brush butter around the bottom of the pan so that the potatoes won’t stick when air fried.
  4. Fill the bottom of the pan with the potatoes.
  5. Brush the top of the potatoes with butter.
  6. Put the pan inside the air fryer and air fry for 10 minutes at 180C or until the potatoes turn brown.
  7. While the potatoes are frying, make a scrambled egg in a separate frying pan.
  8. Get the potatoes from the air fryer and top the potatoes with the scrambled egg.
  9. Add the cheese and then the bell peppers and mushrooms on top.
  10. Air fry again for another 10 minutes or until you see the cheese has already melted.

Yummy! Put some hot sauce (I like!) before you serve or eat it.

You can also use hashbrown or other varieties of U.S. frozen potatoes. They are available in supermarkets and groceries nationwide. Always check the label before adding to your cart.
