Mekeni Classic Tocino – Wake Up To A Breakfast Made With Love

The saying that “Breakfast is the most important meal of the day” is true, not only because breakfast fills up an empty stomach but for me, a good breakfast also fills up the heart.

sleepyEvery morning, I wake up as early as 4AM to prepare our family’s breakfast. My husband and I try very hard to have the table ready and sit with our kids, pray with them and talk to each other at breakfast time. But it’s not easy waking up the kids that early and it’s even harder to make them eat that much. I know most moms can relate with me when I say this. It’s but normal to have a lazy appetite during the morning. But you know what really helps? It’s when I start cooking and brewing the coffee when the house starts to brighten up and make my husband and my kids eager to jump out of bed, take a shower, wear their uniforms and sit in front of the table.

Mekeni Pork Tocino

First time I tasted Mekeni Pork Tocino was in Mekeni’s plant itself in Pampanga. I was decided that I had to let my kids and my husband taste Mekeni when I go back home.

Mekeni Tocino is one of my favorite dishes to cook for breakfast because it is easy to prepare. The slices of tocino are already separated and I don’t have to cut it to pieces before cooking. And unlike other tocino brands, I can fry Mekeni Tocino directly with a small amount of cooking oil. I remember my Lola, who was the expert cook in our family, taught me to boil tocino first before frying, to make sure that it is safe to eat and will not be rubbery. Not so with Mekeni Tocino because it brings out a nice, sweet aroma while it’s being fried and when it is cooked, it is tender to the bite and tastes sweet and delicious with eggs fried sunny side up. Sometimes the kids even like to bring tocino as their “baon” for lunch.
